
one of my favorite grilled items at a middle eastern bbq is shish taouk. there’s something oddly satisfying about eating bbq in the midst of a snow so when i realized we were expecting a storm today, i knew just what i wanted to make for lunch! i personally prefer to use chicken thighs for grilling but you could also use chicken breast! i also prefer to cut the chicken a bit smaller for more surface area, but traditionally the chicken is cut a bit thicker. what’s your favorite thing at a bbq? and do you ever indoor bbq in your stovetop? i love using my @lodgecastiron grill for a pretty good indoor strove top bbq.

3 lb of skinless chicken breast, cut into cubes
10-12 cloves of garlic, minced finely
3 tbsp of tomato paste
1/2 cup of lemon juice
1/2 cup of yogurt
1 1/2 tsp salt
1/2 tsp black pepper
1 tsp 7 spice mix
1/2 tsp of cumin
1/2 tsp of paprika
1/4 tsp of cayenne pepper
1/4 cup of olive oil
soaked bamboo skewers

🍴add all ingredients except the chicken to a bowl and mix thoroughly. slice chicken breast or thighs to your desired size and place in marinade.
🍴marinade shish taouk for as long as you like, at a minimum of an hour (i marinaded my chicken overnight).
🍴allow bamboo skewers to soak for at least an hour in water. when ready to grill or broil, place chicken on bamboo skewers.
🍴place on a well-greased grill or baking sheet and cook evenly on both sides till chicken is cooked thoroughly and a char has formed.
🍴after grilling/broiling, place chicken in a covered plate over thin pita bread until ready to serve to allow shish taouk to lock in its juices and make the chicken very moist.
